Summer Numming
It’s hot as the hell fires and yet I find myself stuck in a snow capped state of mind. Pot roasting, oven broiling, hearty, hefty, heavy hibernation type foods. HELP! What are your favorite summer nummies? I’m looking for inspiration.

Get the hubster out on the grill!!! Shrimp or chicken skewers paired with veggies skewers (zucchini/tomatos/yellow squash/mushrooms are our favs). Grill (or broil) some salmon and let it cool. Top a fresh green salad with the flaked salmon. We also like an orzo pasta salad when it gets hot. Will the kids eat a cold soup? - try gazpacho. For something really quick you can throw together deli meat or tuna salad wraps. It doesn’t require any heating the stove at all.

I love BBQ boneless skinless chicken breast. I usually serve them with a pasta salad or this wonderful salad recipe I found online, it is sooooooo good!
Shelly’s Italian Bean Salad
1 can (15 oz.) Cannelini beans, drained and rinsed
1/2 cup fresh Mozzarella balls (I got the mini ones at Trader Joe’s or just 1/2 the bigger ones)
1/2 cup Cucumber, diced
1 Tomato, diced
1/4 of a small Red Onion, diced
1/2 teaspoon Oregano
1 Tablespoon fresh Basil, chopped
a few twists of freshly ground Black Pepper
Salt to taste
2 Tablespoons Storebought Pesto Sauce
2 Tablespoons Storebought Balsamic Dressing
Combine all ingredients and chill. Can also be made with leftover grilled chicken breast, cold shrimp, salmon or smoked albacore to bump up the protein.

My favorite summer foods are Mexican. Fajitas, guacamole etc. They are lighter, but satisfy my winter type hunger!

We’re all about the bar-b-que (or grill). We love anything that comes off it, our kids not so much (picky little buggers).
If you feel the need for the “comfort” food do you have a crock pot?? I love mine, couldn’t live without it.

Fruit salad. Whatever fruit you want mixed with yogurt, honey if you need sweetener, cinnamon and mint (if you have it–I have gobs and gobs of fresh mint so I always use it, lol). Easy and summery!

Black Beans with Corn and Tomatoes Salad
Ingredients:
1 15-ounce can low-sodium, no fat added black beans, drained/rinsed
1 14 oz can petite cut tomatoes, drained
1 sweet Vidalia onion chopped
1 teaspoon chili powder
Salt, to taste
1 14 oz can corn, drained
couple of splashes of hot sauce
splash of Lime Juice
couple of tbl of EVOO
Preparation:
1. Drain and rinse beans.
2. In a bowl, combine beans, corn, tomatoes onions.
3. Add chili powder, salt, hot sauce, lime juice and EVOO.
4. Combine and serve.
Yield:
4-6 servings
..
(Would be great with rice, too…and if you have a Trader Joe’s, try the recipe with their Cubana Black Beans…but do not rinse them….very good!)
