Gluten Free Carrot Cake

Gluten free carrot bundt cake

* 1 1/4 cups rice flour
* 1/2 cup potato starch
* 1/4 cup tapioca starch
* 3 teaspoons baking powder
* 1 3/4 teaspoons baking soda
* 1 teaspoons salt
* 1 – 2 teaspoons cinnamon
* 2 cups sugar
* 3/4 cup plus 2 tablespoons canola oil
* 4 eggs, beaten
* 2 teaspoons gluten free vanilla extract
* 1 tablespoon mayonnaise
* 2 cups grated carrots
* 1/2 – 1 cup shredded coconut (I use unsweetened and unsulfered)
* 1 (8 1/2 ounce) can crushed pineapple with juice

Preheat oven to 350 F

Either grease a 9×13″ baking pan or grease and sugar a bundt pan (just like flouring a cake pan only using granulated sugar).

In a large bowl sift together the flour, starches, baking powder, baking soda, salt and cinnamon. Add the sugar, oil, eggs, vanilla extract and mayonnaise; stir well. Fold in the carrots, coconut and pineapple (including juice).

Pour into prepared pan and bake. A 9x 13 cake should take about 30 minutes or till toothpick comes out clean. A bundt cake takes anywhere from 45-60 minutes depending on your oven. Cool and frost or glaze.

  • your babies ar e beautiful i wish we ahd the magic amby for our Oliver with reflux and am glad that we didn’t considering its flaws. horrifying that they have been allowed to pretend to address the fatal flaw by making it the responsibility of the parents(of newborns, because they are not already too tired or busy) to properly “repair” the hammock. we were so grateful for the fisher price soothing motions glider which quietly glides side to side, diagonal, forwards backwards.. a godsend and so easy to find used.

    oops. very tired. i think i posted this comment in the wrong place. but the cake sounds yum. i will keep it in mine in case i ever decide to bake or eat anything healthy.

  • oh Fidge…. *drool*. I am so making this. I wonder if I could substitute applesauce for the oil in it and if that would taste okay?

    i think it would fall apart of you subbed applesauce. It’s a very tender delicate and moist cake. Treat yourself! Go for the oil (you can use veggie or another oil instead, I just like using canola)
