On a piece of parchment paper, spread some semi sweet or dark chocolate chips. In a double boiler or metal bowl set over a pot of boiling water, melt white chocolate (I used Bakers, Ghiradielli would work too- Nestle will not). In a gallon sized ziplock back, smash candy canes and when the chocolate is fully melted, use a sieve to sift the smaller pieces / dust into the white chocolate. Pour white chocolate mixture over top of the chocolate chips on the parchment paper. Spread the white chocolate using a silicon spatula or spoon and then sprinkle the larger pieces of candy canes over the top. Allow to cool & harden. You can speed up the process by popping it into the fridge. Once it has fully set up, crack it into pieces and nom (or package for gifts).
**some folks add extra peppermint extract to the melted white chocolate once it’s pulled from the heat but I find this to be plenty pepperminty for me**
